Grilled Eggplant

Makes a great summer side dish.  The eggplant adds just the slightest sweet taste.  With very little ingredients and preparation this will be sure to become a summer staple (and you don't even have to turn on your oven).

Grilled Eggplant
1 eggplant, sliced into "coins"
2 Tbsp. olive oil
3 garlic cloves, minced
freshly ground pepper

Wash and cut eggplant into coins.  In a bowl, add eggplant, olive oil, garlic, and pepper to taste.  Make sure eggplant is coated to your liking.  Place on a medium heat grill.  Cook about 2-3 minutes per side.  NOTE:  I tried to cook mine in a grill wok and it didn't turn out very well.  I ended up moving them directly onto the grill.  I highly recommend just placing them directly on the grill.
