Slow Cooker Chicken Cacciatore

The fixins':
1 lb. chicken, cut into bite-sized pieces
2 15 oz. cans of diced tomatoes (no salt added)
1 8oz. can of tomato sauce (no salt added)
1 medium onion, chopped
3 garlic cloves, minced
1 c. mushrooms, sliced
2 tsp. oregano
1 tsp. basil
freshly ground pepper to taste
spaghetti squash

In crock pot, add onions and mushrooms.  Place uncooked chicken on top.  Add the rest of the ingredients (except spaghetti squash). 

About 20 minutes before you want to eat, take a knife and stab the spaghetti squash repetitively on all sides.  Microwave on high for around 12 minutes (6 minutes, turn, 6 minutes).  You want the skin of the squash to be sort of squishy to the touch.  Once fully cooked, halve the squash and use a fork to extract the "noodles".  Serve the chicken dish on top of squash.  Check out this entry on alternatives for cooking a spaghetti squash
